Still relatively new terrain, but pastry chef Mutsumi Takehara, with her extensive Japanese and French training, is the perfect navigator. In addition to the usual breakfast fare (butter, chocolate, and almond croissants, morning rolls, and muffins) Takehara does many twisted, dreamy things with challah. Die over sweet, chewy challah stuffed with savory fillings in the form of Japanese beef curry, bean paste, or negi-miso. Or, satisfy sweeter hankerings with the spumoni: a sweet challah bun filled with amaretto-soaked cherries and chocolate. The bakery serves both Ritual and De La Paz drip coffee and Mighty Leaf tea. Tea drinkers should also check out the herbal infusions that steep together Mighty Leaf teas, such as the masala chocolate truffle, with cardamom, ginger, cinnamon, and cloves.
