Smoking may be illegal in bars these days, but smoke-flavored drinks are on fire in San Francisco and across the country--easily the hottest trend in the spirits world. Many of the top local cocktail spots now have smoky cocktails on their menus, whether that smoke taste be derived from peaty Islay scotch whisky, fiery and rustic mezcal or actually lighting things on fire. Inhale this trend in any of the following cocktails.

    The Puro: For this cocktail, a dried orange rind is lit on fire, and the burnt citrus fumes are used to smoke the inside of a glass. Then the drink--consisting of rum, two kinds of sherry and bitters--is poured through the smoke and served.

    The Fool's Gold: Over the past year, Absinthe has offered up cocktails with smoked glassware and smoked syrup, but the Fool’s Gold is more conventional, or as conventional as the drinks get at this unique bar. It combines organic mezcal with an exotic herbal liqueur, lemon juice and apricot bitters.

    Single Village Fix: While many of the cocktails on this list contain just a rinse or splash of the smoky liquor, this drink gives us the full dose of mezcal, tempered with pineapple gum syrup and lightened with lime juice.     The Laphroaig Project: Rickhouse offers a few smoky drinks on the menu, but this one is the star of the show. Green and Yellow Chartreuse make up the bulk of the drink, with a dose of Laphroaig whisky for smoke and some citrus to freshen it up. Yet, through some magic of mixology, the drink tastes tropical.
